Dhal for Dummies
(Lentils for Lent)

Dhal is a delicious Indian curried lentils (or Pulse) dish, that is both nutritious and easy. If I can make it, anyone can!

Put in Crock pot for about 4 hours (else it becomes total mush).

2 cups Lentils [green or red]

24 peppercorns

5 cups waters

(If you are substitute red beans and/or garbanzo beans for lentils, start them in the Crock pot overnight [or in the morning, if "Risk" is your middle name]).

Just before serving, make the "Masala", Masala is what we in the West incorrectly call "curry":

heat up the Wok [or pot or skillet or cauldron], (smoking hot)
add

  • 5 tbs.. vegetable oil - NOT olive oil.

Add Masala ingredients {never thought you'd be making "curry from scratch, eh?"}

  • 5 cloves garlic (finely chopped): stir fry for 2 seconds

  • ginger root [equivalent amount to the garlic] (finely chopped):

  • stir for 3 seconds
    (fresh, not powdered
    {grow your own if you can't find it in the store})

  • 1/2 onion (diced)

  • 1 tbs. turmeric powder

Stir fry until onions are cooked. Et voila! You've just made "curry"!

  • Pour the Masala from the Wok into the Crock pot

  • salt (to taste)

Serve on steamed rice.

To fancy it up, you can add stuff like:

  • 1 tsp. cumin

  • other Pulses, e.g. red beans, chick peas, etc.

  • potatoes, green peas, cauliflower, etc.

  • lime juice or vinegar

  • coriander

And especially Chilli Peppers! (both a pleasure AND a Penance!)

Doctor Turi's "Sunday-After-Divine-Liturgy-Licit-for-the-Great-Fast" Cake

Mix together:

2 cups all purpose flour

2 tsp. baking soda

1 tsp. cinnamon

1/2 tsp. cloves

1/2 tsp. salt

In another bowl mix well:

1 1/2 cups mashed banana, applesauce or prune baby food, or any combination thereof

1/2 cup vegetable oil

1/2 cup brown sugar - not packed too tightly (The original recipe called for 1 cup of white sugar, but I found it way too sweet after adding the dried fruit. It was still sweet even with the 1/2 cup sugar.)

1 tsp. vanilla

Gently stir dry ingredients into wet, then add 1/2 cup raisins, currants, chopped dates, or chopped apples. You can also add 1/2 cup chopped nuts if you wish. Pour into greased and floured 9x9 baking pan. Bake at 350°F for 30-40 minutes, until tester comes out clean.

Enjoy - but not too much."

Hrybny Sup & Posny Borshch (Meatless Beet & Mushroom

Hrybny Sup (Mushroom Soup)

6 cups cold water
1/4 pound dried mushrooms
1/2 cup barley
1 large potato, peeled and diced
1 medium onion, peeled and diced
1 medium carrot, peeled and diced
1 stalk celery, trimmed and diced
1 clove garlic, peeled and diced
1/2 teaspoon pepper
1/2 teaspoon salt

Soak mushrooms overnight in cold water in refrigerator to make
mushroom stock. Strain mushroom stock through cheesecloth and set
aside. Wash mushroom caps and stems with a soft brush as needed,
rinse under cold running water and chop. Precook barley for 15
minutes, strain and rinse under cold running water. Pour mushroom
stock into large pot on stove. Add mushrooms, barley, potato,
onion, carrot, celery, garlic, pepper and salt to stock. Season to
taste. Bring to boil, then simmer for 3 hours, stirring from time
to time to prevent scorching. Serves 4 to 6.


Posny Borshch (Meatless Beet Soup)

8 cups water
1 cup carrot strips
1/2 cup celery strips
1 cup sliced onion
1 bay leaf
1/4 teaspoon basil
3 cups sliced beets (canned or pre-boiled and peeled)
2 tablespoons vegetable oil
5 cups coarsely shredded cabbage
1 8-ounce can tomato sauce
2 tablespoons lemon juice
1 tablespoon fresh chopped parsley
1 tablespoon sugar
1 teaspoon salt
1/2 teaspoon black pepper
Fresh dill to taste

In large pot, bring water to boil. Add carrot, celery, onion, bay
leaf and basil. Reduce heat and simmer for 15 minutes. Add beets.
Simmer for 5 more minutes. Add vegetable oil and cabbage. Bring to
boil, then reduce heat and simmer for 20 minutes. Add tomato
sauce, lemon juice, parsley, dill, sugar, salt and black pepper.
Simmer for 5-10 minutes. Before Cheese-Fare Sunday, serve with
sour cream and black bread on the side. Serves 6 to 8.

Cucumber Maki Recipe

Step 1
You will need…

    * some Nori
    * some Sushi Rice
    * some Cucumber strips
    * some sesame seeds
    * 1 Sushi Rolling mat
    * 1 Knife
    * 1 Bowl of water

Step 2
Lay it out
Moisten your hands in a bowl of water. This will stop the rice from sticking to your fingers. Then spread a layer of sushi rice over the nori.

Leave about 1 cm, or half an inch bare at the top – you will need this bare strip to hold the roll in place. Make sure the rice lies evenly over the Nori as this will make the rolling stage far easier.

Step 3
Fillings
Put the Nori and rice onto the makisu. Sprinkle on some sesame seeds, and then lay the cucumber strips horizontally across the centre.

Step 4
Roll
Using the makisu, fold the maki and apply pressure. This shapes the maki. Fold the mat forwards once again and apply more pressure.

Step 5
Slice
To ensure a smooth cut, dip the end of your knife in water. Slice the maki in half. Trim off the uneven ends. Then cut the maki into 6 even pieces.

Display the maki on a plate with each piece facing up.

I'll take the hint.

Side of mashed potatoes a la mode:

Cook and then mash a sufficient amount of potatoes using garlic and a little salt to give it some taste.
Do not add milk or butter.

Mash avocados (1/2 avocado for each serving) and place a generous scoop on top of the potatoes.

Place chopped olives on top of the avocados.

Enjoy.
