From this preview, it appears that the editors may have simply skirted the issue of evolution, and lacked the courage, (or knowledge) to confront this heresy in a straightforward manner.
From a preview of the "Orthodox Study Bible":

Regarding questions about the scientific accuracy of the Genesis account of creation, and about various viewpoints concerning evolution, the Orthodox Church has not dogmatized any particular view. What is dogmatically proclaimed is that the One Triune God created everything that exists, and that man was created in a unique way and is alone made in the image and likeness of God (Gn 1:26, 27). The Church Fathers also consistently affirm that each species of the animate creation came into existence instantaneously, at the command of God, with its seed within itself.

the Father's assertion about simultaneous creation rules out evolution.
The actual quote is this: "The Church Fathers also consistently affirm that each species of the animate creation came into existence instantaneously, at the command of God, with its seed within itself."
The word they used was "instantaneously", and not "simultaneously".
Simultaneously would imply that every species were all created at the same time. Of course this cannot be, since different species were created on different days. Fowls for instance were created on the fifth day, while the beasts of the earth were created on the sixth day.
The word they used, "instantaneously", implies that all the species were created fully grown, i.e. "adult", and not needing any kind of growth or development.
