Traditional and healthful Lenten Orthodox recipes

I am opening this thread to discuss traditional and/or healthful Orthodox Christian recipes that can be used during fasting times since we are going to be in Great Lent within five weeks. Men and women are both encouraged to share their favorite recipes.

Since corn and soy (oil) are mostly GMO, I would like to see substitutes for these two items and any other items that are now GMO.

Here is a simple recipe for avocado toast:

Ingredients:
Avocado
toast or rice cake

Mash an avocado like one would a banana
Spread it on a piece of toast or a rice cake.

Lord Jesus Christ, have mercy on me a sinner.

That suggestion is a sound idea, because the great oil in the Avocado will provide a lot of nutrients during the Fast.

I would recommend, however, ONLY SPROUTED GRAIN bread, if one is in the United States.
If abroad, there are probably lots of delicious options in the bread dept.
Besides one or two nice types of bread, the US is very deficient in this category !

Does anyone have recipes for making home-made fermented vegetables?

Organic fermented veggies (Kimchi or sauerkraut) cost $7.99 to $9.99 for 16 ounces at Whole Foods Market. I also saw a 34 ounce glass jar of organic veggies for $21.99. That is a lot.

The problem with some of these store purchased fermented veggies is the addition of sugar or a lot of salt and black pepper.

I am looking for a simple recipe using a brine solution (salt water) without sugar or black pepper. I did have several good recipes saved on my hard drive last year, but my computer failed permanently, so I lost them.
