I think you can try cottage cheese, you probably would need to drain it over night to get the right consistancy.

However try asking your local store deli to order you some. I have done that when I could not find any. You have to order ahead so that you have it when you need it. Most places are accomondating.

Does anyone have a kulici recipe that is in a smaller quantity? I've never tried to make it before, and most recipes deal with enormous amounts. My kitchen is barely large enough to make...toast, so I don't think I'd be able to pull off a major bakery operation. Still, I would love to try baking my own kulich, so if anyone has any ideas, thanks!

I've done both (Kulich in halve), Pashka (dble qty.) delicious. Will do again this year.
